A rustic sourdough bread based on a lactic sour (with low acid) with 100% Einkorn flour and Oriel sea salt harvested off the Irish sea. Einkorn is one of the first two grains grown in Ireland and Britain, and is the only grain that includes the 8 types of amino acids.
It is an excellent source of protein, iron, dietary fibre, and vitamins, making this bread both nourishing and delicious. This dense crumb has a unique dough flavour and a nutty taste which pairs perfectly with artisan butter. Inspired by tradition, it proudly bears the symbol of the ancient Gold Lunula, honouring the Sun that nurtures the grains to harvest each year.
