
Dillisk Seaweed Sourdough
A LOAF FROM LAND AND SEA
A unique sourdough bread based on a nourishing blend of wheat, spelt, Oriel sea salt harvested in Co. Louth, and confit pieces of lemons. Due to its low gluten content and inclusions, it has a soft and moist texture.
The wild Irish dillisk seaweed from Connemara gives it a bold umami character, offering a salty, smoky flavour with a buttery finish, making this bread a superb nutritional and flavour enhancer for soups, surf & turf stews, smoked fish, shellfish platter, or vegetables.
As a tribute to heritage, it bears the symbol of the Iron Age solar boat from the Broighter Hoard, discovered in 1896 in Limavady, Co. Derry.
