Baked in a traditional stone oven, it develops a distinctive character and depth of flavour. The result is an open, pale crumb and a pleasantly crunchy crust, thanks to the inclusion of durum flour. Its sour aroma carries a subtle lactic tang, balanced by a tender texture. Ideal for sandwiches, it also works perfectly when torn into rustic croutons for a Caesar salad.
